Shelm est une
cuisine de rue saisonnière populaire dans la région du Kurdistan. Les navets
blancs sont récoltés en automne et en hiver. Les habitants cuisent ce
légume-racine à feu doux dans de la mélasse de dattes et le servent chaud avec
du sel et les épices désirées.
