Amedi has been famous for centuries for some of the best tahin in the region. The area holds an ecological advantage with very fertile soil and an optimal climate for harvesting sesame. Salam Sabri opts for a completely water-based production mill, with no electricity or automation involved. His mill produces around 300 kilograms a day, available for local and international export.
